General Purpose of Job:
To facilitate and elevate the quality of the food and level of service provided for all patients, caregivers and guests, by ensuring adherence to established standards and creating new standards as needed. This will be accomplished with a focus on food, service, quality, and leadership.
Essential Duties:
This job description is intended to cover the minimum essential duties assigned on a regular basis. Caregivers may be asked to perform additional duties as assigned by their leader. Leadership has the right to alter or modify the duties of the position.


  • Take ownership of food production for all Patient and Retail areas, to ensure the highest possible integrity of every food and beverage served.
  • Oversee and ensure the success of on-campus and off-premise catering, by evaluating menus, managing logistics, leading caregivers, proper scheduling, participating in events, and ensuring all orders are placed for food, supplies and rental items.
  • Communicate problems, ideas, directives, changes and solutions to caregivers, leaders, guests and patients through a proactive approach.
  • Maintain hospital standards through speech and action, leading by example to support and demonstrate ICARE Values.
  • Elevate, implement and maintain standards for quality, safety, sanitation and communication, ensuring all kitchens and caregivers meet or exceed local, state and federal standards for sanitation, food handling and safe working conditions.
  • Assist Executive Chef and Sous Chef with menu development and implementation, including the proper execution of all related recipes.
  • Maintain all temperature and sanitation documentation—temperature logs for dish machines, coolers, freezers, food cooling logs and sanitizer logs—addressing all deficiencies in a timely manner.
  • Ensure flu shot, LMS and TB compliance for all food/nutrition caregivers.
  • Write schedules for all retail and room service cooks. Take ownership for timekeeping in Kronos for all cooks.
  • Supervise all food, paper and chemical purchases. Be familiar with all vendors, reps and procurement processes; manage invoice reconciliation; track credits; perform random audits; participate in annual business review with all major vendors; maintain up to date order guides for all current vendors.
  • Work with Retail Manager to ensure proper costing and pricing of all retail goods.
  • Work directly with Leadership, Sous Chef and Retail Caregivers to provide allergen education and resources.
  • Manage all department recalls and maintain recall log
  • Assume responsibility for managing all Demonstration Kitchen scheduling, including coordinating and developing programming.

    General Requirements

    Work Experience
    • 5 years of foodservice experience, showing progressive levels of responsibility, including high volume food management and production. • Experience working as an Executive Chef. Preferred. • Leadership training. Preferred. • Customer Service training. Preferred. • Off-premise Catering. Preferred. • Foodservice experience in a healthcare setting. Preferred.


    Education
    • Associate's Degree in Foodservice related field. • Current Servsafe certification • Current Allergen certification


    Specialized Knowledge and Skills
    • Proactive approach to problem solving. • Willingness to take ownership of projects and assignments • Self-motivated with the ability to positively motivate others • Demonstrated knowledge of cooking techniques and the ability to use commercial food production equipment. • Commitment to food quality and safety • Extensive knowledge of food allergens and special diets • Demonstrated understanding of food related systems, portion control, waste tracking & reduction, recipe development and cost control. • Ability to maintain composure when busy and during times of increased stress • Attention to detail • Demonstrated ability to listen, give and take direction, teach and provide instruction, as well as respond productively to constructive criticism. • Ability to organize self and others. • Excellent time management skills • Exceptional verbal and written communication skills. • Working knowledge of Microsoft Word, Excel and outlook, with demonstrated ability to use a keyboard as may be required to perform the essential duties of the job.
